Spicy Celery Soup

Raw Vegan Spicy Celery Soup Recipe -- By Davy RussellThis savory soup is the latest of my kitchen blender experiments. Both Davy and I really liked how it came out. Celery isn’t necessarily the dominant flavor. Instead, celerymingles with the flavors of other vegetables and spices to give it a complex, delectable flavor. This soup has a slight bite to it, but it’s not overly hot if you don’t add cayenne.

The thing I love about raw soups, besides the flavor, is that you can whip up tasty creations with whatever you have leftover in your kitchen and it only takes a minute or two to prepare!

As with most raw soups, it is low in calories so it makes a perfect snack or complement to a raw food meal.
Recipe
  • 3 to 4 large, organic celery stalks
  • 6 organic vine tomatoes
  • 1 large organic yellow pepper
  • 1 large organic zucchini (with skin)
  • 1 teaspoon chili powder and/or a dash of cayenne to taste
  • 1 teaspoon dulse flakes
  • 1 teaspoon ground flax seeds
  • 1 clove of garlic
  • About 4 ounces of filtered water
Directions:

Add the water and tomatoes and blend for about 10 seconds to form a liquid base. Then add the rest of the ingredients and blend on high for about 30 seconds or until smooth. If you don’t have a high-speed blender, your blending time might be longer.

This soup is a rich source of iodine because of the dulse sea vegetables. It’s also a good source of calcium, iron and Omega-3s!
